Chicken lettuce wraps. This dish proves that lettuce wraps are not too light to sustain you. With jalapeno chilies and chipotle sauce, your taste buds won’t know what hit them. If you have any leftover chicken afterwards, you can use it in other dishes later. There are a couple of ingredients that you need for this. Here is what they are:
- 1 red onion
- 400g of chicken breast
- 400g of tomatoes
- Finely chopped chipotle or chili
- Lettuce leaves to wrap
- Slice of avocado
- Olive oil
- Salt and pepper to taste
First of all, heat up the olive oil into a frying pan and then toss in the chicken pieces. Fry them until they become golden, then set aside. If there isn’t enough oil, pour in some more and then fry your chopped onion until it softens.
Secondly, throw in the cubed tomatoes and let everything simmer for 15 to 20 minutes. When the tomato sauce starts to thicken around the edges, add the chicken back to the pan. Cook it for 5 more minutes. Now you can start assembling everything for the wraps. Prepare the lettuce leaves, then scoop out the meat and tomato sauce on top.
Lastly, decorate with avocado slides and sprinkle salt and pepper to taste. To freshen things up even more, you can squeeze a bit of lime juice over your wraps.
